Drowned Eggs
My Mother in Law taught me this DELICIOUS recipe. I’ve been hooked ever since! It’s too good not to share, super easy, and most ingredients we already have on hand
(This recipe is for 10 eggs)
WHAT YOU WILL NEED:
°Onion
°2 big jalapenos
°4 medium sized tomatoes (I like Roma, they’re the perfect size)
°Knorr Tomato Bouillon
°Marinara Sauce (trust me on this one!)
°1 cup boiled water
°Cilantro for flavoring
Chop up a handful of onions (1/2 cup to 1 cup, depending on how much you like onion) and fry in a little bit of cooking oil. Onion needs to be on medium heat, stirring occasionally.
While onion is frying, de-seed the jalapenos and chop up in small pieces. Chop up tomatoes in small pieces.
***This is important- make sure onion is browned fairly well; this is the secret to this recipe. Do not burn.***
Once onion is browned nicely, add in the jalapenos and tomatoes and cook at medium to medium high heat, for about 10-15 minutes. Veggies will become a little soggy.
Once you have this consistency, add in 1 cup of boiled water to veggies.
Bring to a boil on medium high heat, then add about 2 tablespoons of Knorr Tomato Bouillon and stir.
Then add about 3 generous tablespoons of marinara sauce and stir again (you will hardly be able to taste it).
Crack your eggs in the pan (again, this recipe is for 10 eggs). Make sure to leave some space between them so that they have room to cook. Cover the pan and let them cook on medium high heat for about 10 minutes, until you see that yolk is no longer runny. Then flip them over and cook for an additional 5-7 minutes. The eggs should have a consistency of a boiled egg, cooked all the way through, not runny.
**EDIT- I’ve had people ask me about wanting a runny egg and not hard. Just cook the eggs for less time for a runny consistency.***
For the last 2 minutes, add in the chopped cilantro. Before serving, you can flip the eggs again so that cilantro is evenly distributed.
I eat this with corn tortillas or fresh bolillo bread and some avocado on the side.
