Shrimp and Crab Melt Texas Toast Appetizers

Directions:
1. Heat oven to 400°
2. In a skillet over Med heat, add butter & oil. Pat shrimp dry then season. When butter slightly browns, add your shrimp then immediately drizzle with honey. Cook for 2 mins per side. Lower heat to Med low.
3. Next, add in your tomatoes and garlic, cook an additional 3 minutes just til blended. Do not overcook. Remove, drain and let cool 5 mins.
4. In a separate bowl, add the shrimp mixture, Crabmeat, mayo, lemon juice and cheese (reserve ½ C cheese for topping). Mix this well. Taste to test and try not to eat it all!
5. On a baking sheet add your bread. Scoop the mixture on top of the bread. Arrange the shrimp evenly. Sprinkle a pinch of remaining cheese on top, bake for 18-20 mins. If using whole wheat bread, cut cooking time to 12-14 minutes. Garnish with fresh cilantro. Serve immediately
