Hawaiian Rolls: Soft, slightly sweet Hawaiian rolls are perfect for sliders. Keep the rolls connected when slicing them in half to make assembly easier.

Corned Beef: Thinly sliced deli corned beef works best. You can also use leftover cooked corned beef if you have some available.

How To Make These Sliders

Start by preheating your oven to 350°F (175°C). Lightly grease a baking dish large enough to hold the Hawaiian rolls.

Keep the Hawaiian rolls connected and carefully slice them horizontally through the middle. Don’t separate the individual rolls yet. You should have one large sheet of bottoms and one large sheet of tops.

Place the bottom half of the rolls into your prepared baking dish.

Spread a layer of Thousand Island dressing evenly over the rolls. You can add a little more or less depending on how creamy you like your Reuben.

Layer the sliced corned beef evenly over the dressing. Make sure the meat reaches close to the edges so every slider has plenty of filling.

Next, add the drained sauerkraut. Make sure you squeeze out as much excess liquid as possible before adding it to the rolls.

Arrange the Swiss cheese over the sauerkraut. You can use slices or shredded Swiss cheese depending on what you have available.

Place the tops of the Hawaiian rolls back over the filling.

At this point, the sliders are ready for the topping.

How To Make The Topping

Melt the butter in a small bowl or saucepan.

Add the Dijon mustard, caraway seeds, garlic powder, and dried parsley. Stir everything together until well combined.

Using a pastry brush, generously brush the buttery mixture over the tops of the Hawaiian rolls. Make sure you cover the entire surface so the rolls become golden and flavourful as they bake.

Cover the baking dish loosely with aluminium foil and place it in the preheated oven.

Bake for about 15 minutes, or until the cheese is melted and the sliders are heated through.

Remove the foil and continue baking for another 5–10 minutes, until the tops are golden brown.

Let the sliders rest for a few minutes before cutting them apart.

Serve them warm with extra Thousand Island dressing on the side for dipping.

Ingredients

  • 1 package King’s Hawaiian rolls, 12 count Can substitute with rye bread slider buns
  • ½ cup Thousand Island or Russian dressing
  • ¾ lb pastrami or roast beef, thinly sliced
  • 1 cup sauerkraut, drained with excess moisture squeezed out
  • 9 slices Swiss cheese
  • ¼ cup butter, melted
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried minced onion
  • 1 garlic clove, crushed
  • 1 teaspoon poppy seeds optional
  • 2 teaspoon fresh parsley, minced optional
  • 12 pickle slices optional

Instructions

  1. Preheat the oven to 350 degrees F.

    Drain sauerkraut and then use a paper towel to squeeze out any excess moisture. Set aside.

  2. Slice your Hawaiian rolls in half. Spread Thousand Island dressing on both sides.

    Lay the bottom half of the rolls on a baking sheet or pan. Layer on pastrami followed by sauerkraut and slices of Swiss cheese.

    Replace the top bun and set aside.

  3. In a small bowl combine melted butter with Worcestershire, dried minced onion, poppy seeds, garlic and minced parsley. Mix to combine.

    Brush the seasoned butter mixture over the top of the sliders, being sure to coat all the nooks and crannies.

  4. Cover the sliders with foil then bake at 350 degrees F for about 30 minutes until golden brown.

    Cut, then serve with a pickle slice if desired. Enjoy!
